EASY VEGAN RAMEN

Easy Vegan Ramen (No MSG)

Who doesn’t love those little packets of Ramen? They take me back to my childhood when things were much more simple. So I made a vegan version that’s healthier, lower in sodium and without anything gross like MSG!

INGREDIENTS

  • 2 1/2 cups vegetable broth

  • 1/2 teaspoon Better than Bouillon

  • 1/2 tablespoon low sodium tamari

  • 1/2 inch piece of fresh ginger (grated)

  • 1 teaspoon onion powder

  • 1/2 teaspoon poultry seasoning 

  • 1 teaspoon garlic powder

  • 1 teaspoon apple cider vinegar or lemon juice

  • Packet of Ramen noodles (throw away the gross seasoning packet!)

METHOD

  1. Add all the ingredients except the noodles to a medium saucepan. Stir well and bring to a boil.

  2. Reduce heat, add your noodles and simmer until noodles are tender. Usually about 3 minutes. Enjoy!!!

Makes about 2 servings

NOTES:

This is a very basic recipe but feel free to add steamed vegetables or crispy baked tofu to your soup and make it a hearty meal! Some suggestions are bok choy, carrots, celery, mushrooms, spring onions, and top with some sesame seeds. YUM!
