LOADED VEGGIE POTATO BOWL

Loaded Veggie Potato Bowl

This loaded potato bowl is simple and delicious! Customize it to suit your own taste by switching out the veggies and toppings for a different bowl every time.

INGREDIENTS

  • 3-4 medium potatoes (diced)

  • 10oz. bag frozen vegetables (I like California Blend)

  • 3-4 fresh mushrooms (sliced)

  • 1/4 teaspoon smoked paprika

  • 1/4 teaspoon onion powder

  • 1/4 teaspoon garlic powder

  • 1/4 teaspoon sea salt

  • vegan queso cheezy sauce

METHOD

  1. Steam frozen vegetables and potatoes together until tender.

  2. Sautee mushrooms in a small amount of water or vegetable broth with the smoked paprika, onion powder, garlic powder and sea salt.

  3. Add steamed potatoes and vegetables to a bowl. Top with mushrooms and queso cheezy sauce. ENJOY!!!
