TOFU LETTUCE CUPS WITH PEANUT SAUCE

Tofu Lettuce Cups with Peanut Sauce

This is such a refreshing dish for Spring… or anytime! It’s gluten free, full of flavor and comes together easily. Have fun with this recipe by swapping out the toppings and adjusting the sauce to your taste.

INGREDIENTS

MARINADE:

  • 7oz firm tofu

  • 2 tablespoons coconut aminos

  • 1 garlic clove (minced)

  • 1 teaspoon toasted sesame oil

  • 1 teaspoon pure maple syrup

  • 1 inch ginger (minced)

  • 1/8 teaspoon liquid smoke

PEANUT SAUCE:

  • 2 tablespoons all natural peanut butter

  • 1 tablespoon lime juice (about ½ lime)

  • 3 tablespoons water (use less or more for your desired thickness)

  • 1/8 teaspoon red pepper flakes (optional)

ASSEMBLY:

  • 4 lettuce leaves (I used romaine)

  • 2-3 spring onions (sliced)

  • 2-3 radishes (sliced or julienned)

  • pinch of sesame seeds

METHOD

  1. MARINADE THE TOFU - Press tofu for 30 minutes to release as much liquid as possible, enabling tofu to soak up the marinade. While tofu is pressing, whisk together the rest of the MARINADE ingredients in a small bowl. Once tofu is finished pressing, dice it into bite-sized pieces. Now, add the tofu and the marinade to a container with a lid. Place the lid on the container and very lightly shake to get the tofu completely covered in the marinade. Place in the fridge to marinade for about 15 minutes. While you wait, preheat your oven to 400°F and make the peanut sauce.

  2. MAKE THE PEANUT SAUCE - Whisk together all the ingredients for the PEANUT SAUCE in a small bowl and set aside. This will be one of your toppings.

  3. BAKE THE TOFU - Place tofu cubes onto a baking sheet and bake for 20-25 minutes or until golden brown. Turning them over halfway during baking is recommended. While your tofu bakes chop your spring onions and julienne your radishes.

  4. ASSEMBLE YOUR TOFU CUPS - Place 3-5 tofu cubes onto the lettuce and top with the spring onions, radishes, pinch of sesame seeds and peanut sauce. ENJOY!!!
